Message to Students

  1. Greetings class! As we make the transition to remote learning, I feel this is a great opportunity to familiarize ourselves with the City of New York Protection Training Manual. This will be an excellent way to help us prepare for the New York City Food Protection Course and Test. This is more relevant now than ever during a period where people are learning new things about hygiene and sanitation daily.

Culinary Remote Learning Assignments

Please follow the instructions in the following documents:
  1. For each day of our preparation, we will be using the City of New York Protection Training Manual. You will be able to access this through the following link: https://www1.nyc.gov/assets/doh/downloads/pdf/rii/fpc-manual.pdf.
  2. Further, I am going to ask that you begin keeping a Food Log, reviewing your daily “food lives”. Each day, I would like you to describe the food you ate that day. If you helped prepare a meal, briefly explain the role you played, and if you just ate it, please share some of the ingredients you think are in it.
  3. Also, please include how you would change the recipe if you could. Lastly, please share how the information in your City of New York Protection Training Manual appears in your daily food lives.
